Fresh Basil Pesto

100g fresh basil leaves
150ml Mrs Middleton's oil
50g parmesan
50g pine nuts
Juice of 1 lemon
1/2 clove garlic
Salt and pepper to taste


Place all the dry ingredients, lemon juice and 100ml oil in a blender jug and pulse. I like to leave it slightly coarse. Gradually stir in the remaining oil until the desired consistency is reached. Check and adjust seasoning.

Alternatively, de-stress whilst bashing the ingredients together in a mortar and pestle for a more authentic result.
