Ingredients
1 butternut squash
2 red onions
250g feta cheese cut into small pieces
1 teaspoon cumin seeds
2 tablespoons Mrs Middleton's oil
2 tablespoons chopped fresh parsley
Salt and pepper
Method
Wash the butternut squash and cut into chunks, leaving the skin on but removing the seeds. Peel the onions and cut each one into six segments. Place the squash and onions in a baking dish, add the oil, cumin seeds, salt and pepper and mix well. Bake at 180C for 40 minutes, stirring from time to time. Remove from the oven and allow to cool for 5 minutes before adding the feta and parsley. Eat while warm. Delicious with some garlicky grilled chicken and flatbread.
